X-Rated Skyy

X-Rated Skyy combines two very different styles of making drinks, Tiki and molecular mixology. It is made with Skyy vodka, X-Rated Fusion liqueur, lychee, topped with pineapple-mango foam, and served with Campari pearls on aside. X-Rated Skyy

Ingredients

  • 1 oz Skyy vodka
  • 1/2 oz X-Rated Fusion liqueur
  • 1 1/2 oz lychee juice
  • mango - pineapple foam
  • Campari pearls

Mango-Pineapple Foam

  • 7 oz pineapple juice
  • 7 oz mango juice
  • 5 gr Xanthan gum

Campari Pearls

  • 1 oz Campari
  • 2 oz peach schnapps
  • 10 oz fresh Mellon juice - honeydew
  • 1/2 oz agave syrup
  • 1/2 oz fresh lime juice
  • 2 gr Sodium Alginate
  • 2.5 gr Calcium Chloride
  • 500 ml water

Instructions

Shake vodka, x-rated, and lychee with ice. Strain into a chilled cocktail glass. Top with foam and serve the pearls in a small Chinese spoon aside.

Foam:

Dissolve the Xanthan gum in the juice, use an immersion blender to dissolve it completely. Fine strain the mixture and leave it in the fridge for a couple of hours to get rid of the incorporated air. Pour into an iSi type of canister and charge with one N2O cartridge for a 0.5L size canister. Shake a few times and put in the fridge.

Campari pearls:

Mix half of the liquid, except the alcohol, with the SA, use an immersion blender. Once the SA is dissolved, add the rest, including the Campari and the peach schnapps. Blend again, trying not to incorporate too much air. Fine strain and leave it in the fridge for a few hours to reduce the amount of air in the mix.

Prepare Calcium Chloride Bath

Dissolve 2.5 g of calcium chloride into 500 mL of cold water in another vessel.

Use a catheter syringe with a wider tip opening or a squeegee bottle. Drop by drop, squeeze the liquid gently over the bath from about 11/2" distance. That is the cheapest way to do it; other than that, there are other tools on the market to create proper spheres.

Use a slotted spoon to remove the caviar from the Calcium Chloride bath and rinse it into another vessel filled with cold, clean water. Strain and store in the fridge. The liquid inside the spheres starts to jellify slowly in about 20-30 minutes.

Notes

Be careful with the pressure canister. Follow the manufacturer's instructions.
