Screwball Whiskey cocktail with Soju, Amaro Nonino and Yuzu.

Ingredients
- 1 oz Apple soju
- 3/4 oz Screwball whiskey
- 3/4 oz Amaro Nonino
- 1/2 oz Oleo saccharum*
- 1/2 oz lemon juice
- 3 splashes of Yuzu bitters
Instructions
- Shake all the ingredients with ice for 15 seconds and strain into a chilled cocktail glass. Garnish with an apple slice.
Notes
Oleo Saccharum syrup
- 4 lemons or 4 oranges or ( mandarins, clementine)
- ½ cup sugar
- Remove zest from lemons in wide strips with a vegetable peeler, leaving a white pith behind.
- Toss with sugar in a medium bowl.
- With a muddler, press down the lemon strips to extract the pils and cover.
- Let sit for at least 2 hours and up to 1 day (the flavour will intensify with time).
- Before straining the mixture, add water, mix, and press on solids to extract as much oil as possible.
- Strain into an airtight container, and discard zest.
- Cover oil and chill; it can stay in a fridge for about a week.
- Oil can be made one week ahead.
