Apple cider – hot and cold drink is served in a short/shot glass, where the drink’s temperature is both hot and cold at the same time.
The effect of this drink, besides the taste, is about the unexpected sensation of temperature difference. I go more into detail about this technique here.
- 8 oz Apple cider
- 2 1/2 oz butterscotch
- 1/2 oz lemon juice
- 2 oz orange juice
- 2 oz Agar - I used Jasmine flavored one
- cinnamon sugar
Dissolve the agar for a few minutes in a little bit of cider.
Add the rest of the ingredients, except for the cinnamon sugar.
Boil it - a high temperature is necessary for the gelling process.
Once boiling is done, put it on a side, it will become a firm gel, usually within a few minutes.
Wait until it cools down and put it in the fridge, as we need part of the drink to be cold.
When it is ready, take some of it and heat it. It takes me around 20 seconds to get the right temperature and texture in my microwave.
Take the same amount of agar gel from the fridge and whisk it or blend it to become a fluid gel.
Use a small shooter type of glass for the drink.
Insert a divider in the middle of the glass and slowly pour the hot and cold mixture on each side.
After carefully removing the divider, the gel part of the drink will hold the warm part of the drink.
Sprinkle some cinnamon sugar on top.
Timing is essential as the hot agar base will start slowly jellifying in about 10-15 min.
