Tortilla Edible Menu

After experimenting with the Edible menu and the flavouring of edible wafer paper, I wanted to see if I could add a different texture to it and be more flexible on how to apply flavour. Since one of the ways was to bake the menu, I thought, why not use some bread base to which I can add flavour? Then I put the menu on top of it and baked it. I wanted to see what would happen if I used Tortilla, Naan bread, and phyllo pastry as a base for the edible paper.

The process is the same, just a different texture. The process is a bit different when using phyllo pastry, and I will post some notes below the tortilla recipe.

Edible menu with tortilla

Materials

  • For the Tortilla base - One Tortilla
  • Olive oil
  • Garlic powder
  • Italian seasoning
  • Grated Parmesan cheese 
  • Red paprika

For the Edible menu

  • Wafer Paper
  • Light corn Syrup - optional

Tools

  • Edible ink Printer
  • Spatula or brush

Instructions

  1. Brush the tortilla with olive oil.
  2. Sprinkle the spices over.
  3. Add the cheese.
  4. For the paper - optional.
  5. Brush the back of the paper with light corn syrup, ensuring a thin layer of syrup covers all of it. Dry spots will cause paper bubbles during the baking process.
  6. Place the wafer paper on top of the tortilla.
  7. Bake at 375-400 F for 5 - 8 minutes until the tortilla is crispy.

Notes

I covered the tortilla and the menu with parchment paper—on top and bottom—so there was no aftertaste of corn syrup. Serve with a choice of dipping sauces.

Note;

Baked edible menu on phyllo pastry.

Use two pastry sheets, spread them on a flat surface, brush the top with olive oil, sprinkle some feta cheese, and add the spices or any flavouring you like. This method is similar to preparing Spanakopita, Banitza (Баница), or Burek in South-Eastern Europe.

Brush the backside of the menu lightly with corn syrup or olive oil, place it on top, and press the paper gently to adhere to the phyllo.

Bake at 375F for about 5 minutes, until crispy.

Other options include spreading staffing between the filo pastry sheets before baking, spraying the menu after baking with flavoured mist, or using an Airbrush to add some colour; make sure you use edible food-grade colours.
