Hot Cold Geisha

Hot Cold Geisha is a sake-based cocktail, the idea I got while working on making drinks with different temperatures served in the same glass. I was doing some research on sake when I came across the Geisha Martini, created by Simon Difford at diffordsguide.com, and I decided to use one of the main ingredients, Junmai Ginjo sake, as a base for the Hot & Cold Geisha Martini.

The cocktail’s main ingredients are Junmai Ginjo sake, Japanese blended whisky, Martini Extra Dry Vermouth, and Agar-Agar. Check out this Hot-Cold Raspberry Lychee sake recipe.

Ingredients

  • 1 oz Junmai Ginjo sake
  • 1/2 oz Japanese blended whisky
  • 1/4 oz Martini Extra Dry vermouth
  • 7 oz Jasmine tea*
  • 1 Tbsp sugar
  • 2 oz Agar*

Instructions

Prepare the Jasmine Agar tea first:

Dissolve the agar in a little bit of water for a few minutes.

Add water, sugar, and jasmine tea.

Boil it - a high temperature is necessary for the gelling process.

Once boiling is done, please put it on a side and add sake, whisky, and vermouth. Stir gently; it will not take long for the gelling process to begin.

Please wait until it cools down and put it in the fridge, as we need part of the drink to be cold.

When it is ready, take some of it and heat it. It takes me around 20 seconds to get the right temperature and texture in my microwave.

Take the same amount of agar gel from the fridge and whisk it or blend it to become a fluid gel.

Use sake or a similar glass for the drink.

Insert a divider in the middle of the glass and slowly pour the hot and cold sake on each side.

After carefully removing the divider, the gel part of the drink will hold the warm part.

Timing is essential as the hot agar sake base will slowly jellify in 10-15 min.

Notes

*If using flavoured agar, substitute it for jasmine tea.

*Different Agar products might need an adjustment of the amount needed. I once bought a flavoured Agar from an Asian store, and I had to increase the amount to 2.5 gr, 0.8% of the total liquid volume, to make it work

Instead of Jasmine tea, try raspberry tea/syrup or blubbery-infused syrup.
