Playboy Cocktail – with Edible Gold

On June 10-11, 2010, the Playboy magazine celebrated its 50th anniversary; selected cities and venues worldwide were chosen to host parties to commemorate the world-famous Playboy Clubs.
The Playboy cocktail bellow was the drink served at the pre-dinner reception party in Niagara Falls, Ontario; a combination of vodka, apricot, lychee, mango foam, edible leaves, and bunny sprayed on top with an airbrush.

Playboy Cocktail with Edible Gold

Ingredients

  • 1 oz vodka
  • ½ oz Apricot liqueur
  • ½ oz lemon juice
  • ¼ oz grenadine
  • 1 ½ oz Lychee juice
  • Passion Mango foam*
  • Edible gold
  • Optional - red coloring or strawberry syrup-diluted

Instructions

Shake everything, except the foam, with ice. Strain into a chilled champagne glass.
Top with Passion Mango foam. Sprinkle edible gold on top.

Optional - Use a pre-made stencil in the shape of a bunny to spray the color over, then sprinkle the edible gold.

Note: for color, use red coloring or strawberry syrup – diluted.

350 ml of Mango juice.

150 ml Passion fruit juice

0.5% Xanthan gum - of the total amount

Blend using an immersion blender. Let it sit for a couple of hours in the fridge to eliminate the air bubbles. Pour it into the iSi canister and charge it with one N20 cartridge for a 0.5L canister.

Shake the Cream Whipper a few times and put it into the refrigerator for at least two hours. If you need the foam right away, it will take at least 10-15 min. to get proper foam.
