Clover Club Cocktail --- early 1900s

The Clover Club cocktail was created at the Clover Club bar of the Bellevue-Stratford Hotel in Philadelphia.

Ingredients

  • 1 1/2 oz gin
  • 3/4 oz lemon juice
  • 1/4 oz raspberry syrup (preferably house-made)
  • white of 1 egg, or 1 tablespoon pasteurized egg white

Instructions

Dry shake the ingredients - no ice, for about one minute, it allows the egg whites to form nice foam when poured at the end.

After that, shake it again with ice. Strain into a cocktail glass. Garnish with raspberries - optional.

The Clover Club cocktail was first made at the Clover Club bar of the Bellevue-Stratford Hotel in Philadelphia around the turn of the twentieth century.
