Ingredients
- 1 1/2 oz soju
- 3/4 oz oleo Saccharum*
- 2 scoops of yuzu ice cream or sorbet
Instructions
- Add two scoops of ice cream to a chilled sorbet glass, pour over the soju, and squeeze the syrup. Serve with a spoon on the side.
Notes
* Oleo Saccharum - Used in cocktails for added depth.

- 4 oz sugar
- 4 oz hot water
- 2 oz citrus peels
- Peel the citrus of choice (orange, mandarin, etc.), cover the peels in sugar, and place them under plastic wrap.
- After 24 hours, the sugar will have drawn out the citrus oil to become a sugary slush.
- Add hot water to the sugar and stir to dissolve.
- Strain through cheesecloth, pressing on the solids, into a mason jar. This should be kept in the fridge for a week.
