Soju Sorbet

  1.  Soju Sorbet is a delicious frozen dessert drink from soju, Yuzu ice cream, and Oleo Saccharum syrup.

Soju Sorbet drink and yuzu ice cream

  • 1 1/2 oz soju
  • 3/4 oz oleo Saccharum*
  • 2 scoops of yuzu ice cream or sorbet


  1. Add two scoops of ice cream to a chilled sorbet glass, pour over the soju, and squeeze the syrup. Serve with a spoon on the side.


* Oleo Saccharum - Used in cocktails for added depth.

  • Aprx amount of ingredients needed.
  • 4 oz sugar
  • 4 oz hot water
  • 2 oz citrus peels
  1. Peel the citrus of choice (orange, mandarin, etc.), cover the peels in sugar, and place them under plastic wrap.
  2. After 24 hours, the sugar will have drawn out the citrus oil to become a sugary slush.
  3. Add hot water to the sugar and stir to dissolve. 
  4. Strain through cheesecloth, pressing on the solids, into a mason jar. This should be kept in the fridge for a week.
