Eden’s Ember Deconstructed is a variation of Eden’s Ember, the winning cocktail I created for Canada’s 2008 Tabasco Cocktail competition.
Due to the Jalapeno and the Original Tabasco pepper sauces, the original drink has an herbal, fruity flavour with two different layers of spiciness.
I wanted to deconstruct the drink and reintroduce the flavours into the cocktail so that it looks different but tastes pretty much the same.
Eden's ember Deconstructed
Ingredients
- 1 ½ oz Skyy vodka
- ¾ oz fresh lime juice
- 8 mint leaves
- 2 tsp of sugar
- few drops of Jalapeno Tabasco
- 1 dash Angostura bitters
Apple Tabasco foam*
- 400 ml – 13.5 oz - fresh Apple juice
- 3 drops of Original Tabasco pepper sauce
- 1/2 oz lime juice
- 0.5% Xanthan gum – of the total amount
Instructions
Muddle the mint leaves with sugar, lemon juice, Jalapeno Tabasco, and bitters.
Add the vodka. Shake with ice and strain into a cocktail glass. Top with Apple Tabasco foam.
Garnish with an apple slice.
Apple Tabasco foam*
Blend using an immersion blender; try not to incorporate too much air.
Fine strain and put it in the fridge for a couple of hours or overnight.
Pour into an iSi type of canister and charge with one N20 cartridge.
Shake it a few times and put it in the fridge.

Notes
Follow the manufacturer's instructions on how many chargers can
be used with the container. Usually, for 0.500 L, use one charger.
